Default Do Catholic, Orthodox, and Anglican churches have to stop serving communion wine at 2

If not, could I start a "faith-based" dance club and keep it open all night?
Maybe I could get some federal funding?

no just as you don't have to stop drinking after 2AM. easier yet why not start a home dance club.

All the donations are tax deductible too.
It should be valid as it's not far from what happens now.
Your way wouldn't get as much "prophet" margin though because you have to buy inventory and the competition doesn't.

The 2:00 AM cut off is not a blue law; it is to give the roads a safety margin (and let the cops know when to go pick up drunks).
