Well, I am a Christian, but one book I really enjoy on Confucianism is The Analects of Confucius: A Philosophical Translation by Ames and Rosemont. The introduction is 60 pages long, very readable, and stimulating. Hope that helps.

[edit] Okay, another book on Buddhism you might like is What the Buddha Taught by Walpola Rahula. It is also very good and my copy is full of underlining. Both of these books were part of a course I took taught by a Ph.D student in Eastern Religion at University of Chicago.
