In Judaism, how long do you have to wait for before eating a meat meal, just after you had any dairy products?

The answer will vary with the Jew that you ask. The biblical restriction sates that you should not steep a kid in its' mother's milk. I'm sorry, but I cannot give you the chapter and verse. It is in the Old Testament and I am told that it makes good dietary sense as well. Milk and meat do not digest in the same way or at the same rate, therefore, it is a good idea to keep them separate. I have also seen the citation as, do not boil a calf in his mother's milk, so it is in translation as well.

Depends on how religious you want to be. Some people wait an hour, some people will wait a whole day.

for meat after dairy one only has to wait 15 minutes.

The elapsed time varies from rinsing your mouth out thoroughly between dairy and meat, to waiting anywhere between 15 minutes and six hours. It depends on how strictly you want to adhere to separation of the two.

The rules are completely different when meat is eaten first. In this case, you're supposed to wait six hours before then consuming dairy products.
