I was never catholic, but I can speak for catholic relatives that left the unsaying doctrine of Catholicism, and came to believing in Jesus for salvation. They knew that they had no assurance of salvation in Catholicism, so they came to believe in Jesus as God and Messiah, and got immediate assurance of salvation (1 John 5:13).
Some of the very best stories of conversion to Catholicism can be found on television EWTN whose host is also a convert. The program is "A Journey Home".
Wait..which are you asking -- why they switched FROM Protestant to Catholic.. or Catholic to Protestantism.
Because your first part sounds like Protestantism -> Catholic, but the last part of your question seems to indicate Catholic -> Protestantism.
Which is it?

As a Catholic who's wife is Baptist and after listening to some conversion stories on EWTN's "Journey Home" or on Catholic Answer's LIVE radio program -- 2 things seemed to be echoed over and over again.
1) As they try to get back to what the ORIGINAL Christians believed -- as they learn more about history and what the very first Christians, those which lived during the life of Christ and heard him preach. They see a belief that looks more and more Catholic and less and less Evangelical or Pentecostal, or Baptist, or Presybterian, etc. What they are left with is this nagging belief that the Earliest Christians were more Catholic then anything else we see today or any other time through tout history. To "follow Jesus" and what he taught... seems to lead them to the Catholic church. Historically speaking at least.
So in many cases.. HISTORY compels them to be catholic.
2) For many of them it was the Eucharist - they became convinced that Jesus truly meant "I am the bread of life" in John 6 - and the only place they found TRUE reverence for the Holy Eucharist was in the Catholic faith.
These are the 2 general stories I hear recounted again and again.
There are other reasons. Sometimes the charity of a Catholic person in their life. Sometimes a life crisis that brings them to the church, etc. etc. -- but those 2 stand out as the most common.
I was a fun die and I wasn't saved until I came to the truth of the Catholic Church. I was more hard core than Chris and just as ignorant.
Chris can not in anyway speak for Catholics or his uneducated relatives.
Chris is the one who is not saved and is doing the work of his Father the Devil.
God wants all people to be saved that "come to the truth"
1Timothy 2:4 Who will have all men to be saved, and to come to the knowledge of the truth.
where does the bible tell us the truth is?
1Timothy 3:15 if I am delayed, you will know how people ought to conduct themselves in God's household, which is the church of the living God, the pillar and foundation of the truth.

Protestant's sermon caught my attention one time. However, we cannot deny the authentic history that the Catholic church is the Church of Jesus. Teachings were handed down to the apostles Thur the uninterrupted papal successions. Thus end my search.
I was raised Methodist, spent time in a non-denominational group for a while, and then did several years of "I don't need a church to define me." Thankfully, God has patience, and eventually his gentle call led me to his Church, the Catholic Church.
Knowing Christ, and now being Catholic, has helped deepen my relationship with Christ in ways I cannot even express. Through the sacraments, true sanctifying grace is poured out...I can't imagine ever being anywhere else. My only regret is ta ht I didn't come home sooner.
