In the black spirit religion, the skull represents their familiarity with animal sacrifice and is a symbol of the devil and death.

Certain animals are associated with different Orishas.

In "Altar of my Soul," Marta Morena Vega has the goat associated with the Orishas Olodumare, Obatala, Ochosi, Ossain, Oya, and Obba, Orunla. There are many more Orishas and I'm pretty sure some of them are associated with goats. By saying "associated" I mean that the animal is sacred to that particular Orisha, just as certain vegetables and herbs are also.

AS far as what it represents in a ceremony, I don't know.
