Buddhists have no specific god or goddess that they have to follow, so the ones who aren't atheist make one up or use a god/goddess from another religion. There's probably some Buddhists who see Jesus as their god/one of their gods. I don't know about Shinto, I never really looked into that religion.
Because neither religion mentioned believe in "God" they would not believe in Jesus as the Second Person of the Blessed Trinity and so I think that neither religion would believe Jesus t be God.
I went to Japan and this is what I was told. They believe in everything and in nothing because if you believe in everything then you truly do not believe in anything
Why would they? At least not in the sense that you mean (e.g. to the exclusion of all others). The bible after all is just a collection of stories, some history, and some preaching by those who wanted power over the masses. Don't forget that the new testament was written some time after Jesus' death (some say a couple of hundred years) by people who had a political agenda and a real dislike for women, so what Jesus might have actually said was well on the way to becoming a legend.
However, there is nothing in Shinto that says you can't be a Christian, Buddhist, or belong to some other religion--what you're worshiping is just another Kami and as long as it does no harm it's fine. In fact, many Shintoists have another religion because Shinto focuses on living your life in harmony with nature and society rather than being focused on death like Christianity, Buddhism, and most other religions, and some feel more comfortable having another religion to take care of the afterlife.
