If the main goal is to be in accordance with the Tao, how do you NOT be in the accordance with the Tao?

I'm not going to write a book for you, but instead I will direct you to a book "The Tao of Pooh", by Benjamin Hoff. This puts the Tao in the easiest terms for a westerner to understand. It is a quick easy read that explains the Tao through Winnie the Pooh and is friends. You will have a much better understanding after you read it.

Tao governs everything. There's no definite way to follow it and go against it.
You'll feel happier when you're in-line with Tao. but still there's no assured way of being happy or unhappy

I'm a Chinese and even I'm a Christian I understand Taoism philosophy well

There is no sin in Taoism.

To be Taoist you have to observe and not define. To be against the Tao, you have to be blind to everything around you, and make stupid and incorrect definitions for everything.
